Vichyssoise - a summer soup…

First of all, a big thank you to all of you who read yesterday's post, I am hugely grateful for all your kind words and have now managed to put the whole thing behind me which feels wonderful.

So now for something much lighter, in the metaphorical as well as literal sense I guess. It's hot, it's sunny and the heatwave is (at least for this week) here to stay and even though I generally like my food (I know, who'd have thought), I'm finding myself eating less at the moment and certainly not wanting a big, hot meal.

Ok, the exception would have been last weekend when my parents visited (on top of the incident and my son's birthday - yes, it was a busy weekend) and I knew that my dad really wanted to go to an Indian restaurant here in London. So, on one of the hottest days, we had a hot curry…don't ask...

Anyway, back to the lighter food then. This is a soup. "Soup in this heat?" I hear you say. Well, it's a cold soup. That's why it's so perfect for this weather. It's a classic, French Vichyssoise, a cold leek and potato soup with a very delicate taste. It might sound weird at first, but believe me, it's a great meal for hot days and tastes lovely.
