Summer berries tart…

Seasonal cooking and baking is something that is important to me. I'm certain I've mentioned it before, but you won't find me hunting down strawberries in November or drinking mulled wine even on the chilliest summer evening. I like to try at least to keep things as authentic as possible. That's not to say that I'm completely immune to imported food stuffs. I mean, bananas are not really ever in season in this country and there are other things that will have come from further afield than Kent, but I try at least to stick with the seasons of the northern hemisphere as much as I can.

So, as we are in the middle of summer, what else could be more appropriate than berries. You might have seen my Chocolate Pavlova with Crème Fraîche and Berries the other week and by now think I'm slightly obsessed. Well, you're not completely wrong. Summer, and with it its fruit, always seem to disappear so quickly that I feel I need to make the most of it while it lasts - in vast quantities. Quick, something seems to tell me, hurry up or it will be over before you know it. A sense of missing out befalls me. It also has to do with a sense that life in general seems to move too fast, or is that just me? We're already in August. A feeling of "where has the time gone" is creeping up on me and with it the fear of not making the most of each day. This slight feeling of unease I have when I look at the calendar and realise that we're well into the second half of the year that seemed to only have begun a couple of months ago. Maybe that's just me though…

But I'm clearly getting away from the main subject here, the tart and the berries. This is nothing spectacularly new. It's pretty much a classic in fact. Sweet and zingy berries, smooth vanilla and a crunchy crust. But classics are classics for a reason. They've stood the test of time and are able to please most people.
