If you're familiar with French food, you probably know about rillettes, the lovely and highly fattening stuff made from shredded meat which tastes fabulous on some toast. However, as it is so often the way, if it tastes great, it's probably not very good for you… There it goes. Bring the fruit salad. Or, make my salmon rillettes. Instead of meat and lots of fat, this recipe uses salmon and crème fraîche. It has lots of flavour - if I may say so myself - and works really well as a canapé served on toasted slices of baguette.
