I love all the Christmas cooking and baking, but occasionally fancy something that doesn't involve cinnamon, cloves, ginger and all the other flavours associated with it. I need something with subtler flavours and a little different. So, when I found a recipe for these rosewater and pistachio marshmallows in Red magazine, I just had to try it.
Now, I had never made marshmallows before, but since I like trying new things, I was happy to get my sugar thermometer out and give it a go. Well, what can I say, they came out rather lovely I think and taste good enough even for Monsieur to like them - and he doesn't generally like sweet things.
