Lemon Thyme & Honey Madeleines with Honey & Whiskey Glaze...

I'm finally getting around to posting the madeleines I made well over a week ago. If you follow me on Instagram, you will already have seen one sneaky picture, but I still needed to edit the others for my post. Now I'm nearly glad it's taken me so long because I'm not quite certain when I will be posting the next recipe. Unless it's one that doesn't require any chopping and can be made more or less with one hand and maybe my stand mixer. On Friday I've had something of a freak accident in my kitchen whilst cutting rock-solid butter to make puff pastry. Not wanting to go into too much detail, let's just say the knife was very sharp and it looks like I'm set to lose the entire nail on my left middle finger. Even typing is a very slow process right now, and the voice recognition system doesn't seem to be able to cope with my accent as it "types" totally non-sensical sentences that need so many corrections that I might as well try and type it myself. So, I hope you'll understand if I don't write one of my long-winded rambling posts - come to think of it, you might even be glad that I'm skipping straight to the recipe... 

Lemon Thyme & Honey Madeleines with Honey & Whiskey Glaze

I wanted to make these madeleines a little different to the classic "dry" version. Not that the classic ones are actually completely dry, if they are they've probably been in the oven for too long, but I wanted to make something that reminded me of one of those syrup-soaked little cakes that can be found in the Middle East. More intense in taste and more interesting. Classics are great of course and there's a good reason why they have stood the test of time, but they're also great as a foundation for new recipes and variations and this is mine. 

Lemon Thyme & Honey Madeleines with Honey & Whiskey Glaze

To make around 36 madeleines you will need the following ingredients:

  • 200g plain flour
  • 200g golden caster sugar
  • 200g butter, slowly melted
  • 2 whole eggs, separated
  • 2 egg whites
  • 2 tbsp honey
  • 2 tbsp very finely chopped lemon thyme

For the glaze:

  • 50g butter
  • 30ml whiskey
  • 4 tbsp honey

And here's how it's done:

  • preheat your oven to 190C, grease the madeleine mould and dust with a little flour
  • mix together the flour and sugar
  • in a separate bowl, mix the melted butter, egg yolks, honey and chopped lemon thyme
  • whisk the four egg whites until they form stiff peaks
  • using a spatula or wooden spoon, combine the flour/sugar and butter/egg mixtures until smooth
  • fold half of the egg whites into the mixture and once combined, fold in the second half
  • now spoon around half a tablespoon of the mix into each mould
  • bake for 14 minutes (12 minutes if you want the madeleines without the glaze)
  • once they're done, turn them out onto a cooling rack
  • to make the glaze, mix the butter, honey and whiskey in a small saucepan
  • bring to a light boil and leave to bubble for about 2 minutes
  • take the glaze of the heat and leave to cool a little
  • now brush the glaze generously over each madeleine and leave to soak in
  • put the madeleines into an airtight container and leave over night as they're best once the flavours have really sunk in
  • enjoy with a cup of tea
