Cherry Tomato and Cheese Clafoutis...

I don't know about you, but I can't believe it's Friday already! This week has just disappeared in what feels like the blink of an eye. An exciting new opportunity has presented itself (more of that another time) and at the same some clients have come back with more work which is great. And then there's of course the cooking. Spending time preparing food is (when it's going well) is a bit like therapy to me: I can let my thoughts wander, have my little kitchen space with music on and get to eat the results. What could be better? In those moments I often feel completely content and happy with what I'm doing and with the world...

Cherry Tomato and Cheese Clafoutis

This time I wanted to come up with something new and as I didn't feel like making something sweet (for a change), I thought I'd try to make a different version of a clafoutis. A classic clafoutis is a sweet dish with cherries and ground almonds. Here, however, I have turned this classic into a vegetarian main course using cherry tomatoes, semolina instead of ground almonds and cheese. The result is a warm and satisfying dish which isn't too heavy and can also be eaten cold. Perfect for the weekend I think.

Cherry Tomato and Cheese Clafoutis

Here are the ingredients you'll need to feed six people:

  • 100g semolina
  • 200g grated cheese, mature cheddar works well
  • 400ml half fat milk
  • 4 eggs
  • 300g cherry tomatoes
  • good handful of flat leaf parsley
  • 1tsp salt
  • ground pepper to taste
  • butter for greasing the tart dish

And here's how it's done:

  • Preheat your oven to 180C
  • Grease your tart dish with the butter
  • Whisk the eggs, then add the grated cheese, salt and pepper and mix thoroughly
  • Finely chop the parsley and add to the egg/cheese mix
  • Pour the milk into a pan and bring to a boil
  • Turn down the heat and pour in the semolina
  • Keep stirring until it thickens which will happen quite suddenly
  • Take off the heat and stir a little more
  • Now pour the semolina slowly into the egg/cheese mix whilst continuously mixing
  • Pour the whole mix into the tart dish
  • Position the whole tomatoes into the mix
  • Put the dish into the oven and bake for 35 minutes

The result will be like a savoury tart but without the usual crust. Not quite a heavy winter meal, but quite perfect for this "in-between" time of the year when it's cooler outside, but not yet freezing cold. I hope you like it.
