Brown butter, sage & parmesan mini buns...

The other day I wrote about (amongst other things) how I don't really mind the lack of sunshine during this time of the year and that simply accepting that January will never be the cheeriest of months makes it infinitely easier for me to cope with this dreary month. I might be one of the few people who actually look forward to November and the Winter months, the darkness, grey skies and the flicker of candle light. And then it happened on Sunday. The sun came out, streaming through the windows and filling our home with light. I felt a sudden burst of energy and happiness. The kind that is often suppressed when dark clouds are hanging low and that unexpectedly and suddenly hits you in the stomach and puts a smile on your face and a spring in your step.

And it's that spring in my step that made me decide there and then to bake some mini buns for our very late breakfast - or brunch. What better way to spend a Sunday than to bake and then enjoy it with the family? The buns did admittedly last longer than the sunshine which - in true London style - decided to disappear shortly after laying the table. Anyway, sunshine or not, if you'd like to make these little savoury buns, read on to find out how. 

Brown Butter, Sage & Parmesan Mini Buns

Ingredients for around 18 mini buns:

  • 200g plain flour
  • 200ml semi skimmed milk
  • 50g finely grated parmesan
  • 100g butter
  • 2tsp baking powder
  • 2 large eggs
  • 1 heaped tbsp finely chopped, fresh sage
  • butter and flour for the moulds

And here's how it's done:

  • preheat your oven to 175C
  • butter and flour your bun pan
  • mix the flour, parmesan and baking powder until well combined
  • put the butter into a pan and heat over a medium to high heat
  • once the butter has stopped foaming and turned brown, add the sage and briefly fry
  • take the butter off the heat and leave to cool slightly
  • in a food processor, mix the milk and eggs until combined
  • add the melted butter and sage by slowly pouring it whilst continuously whisking
  • once combined, add the flour/parmesan mix spoon by spoon and whisk until well combined
  • put one tablespoon of mix into each mould
  • put the pan into the oven and bake for 25 minutes
  • serve with butter and a hot cup of tea or coffee
