Banana cake with Peanut Butter Frosting & Chocolate Ganache...

Spring time is the time to cook and bake light food full of fresh goodness. You know, beautiful and fresh new fruit and vegetables, light pastry and all those lovely things that are back in season. And I am usually a seasonal cook. I tend to "go lighter" in spring and summer and cook more filling and warming meals in autumn and winter. It feels right and natural to me. So, a full-on cake with chocolate and frosting was the last thing on my mind when, a couple of weeks back, I found eight (!!!) small bananas in our kitchen which had turned nearly black. I might have mentioned before that I absolutely hate wasting food, so throwing the bananas in the bin wasn't an option. I had to do something with them, so did what I typically do and baked. I had found a gluten free recipe for a banana bread, but wanted to make something a little more outrageous. I know the combination of bananas and peanut butter is a pretty common one in the US, but I had never tried it myself. I also knew I liked peanut butter and chocolate cups (another combo I had first tried in NY) and that's when I came up with the idea of combining the lot, bananas, peanut butter and chocolate into one big cake. A veritable treat, admittedly not for the diet conscious. So, if you like this combination too and you're after a mega treat, here's my recipe.

I have adapted the banana bread recipe from Civilized Caveman Cooking

You will need the following ingredients:

For the banana cake (bread):

  • 8 small, overripe bananas, mashed
  • 140g smooth peanut butter
  • 60g butter, softenend
  • 60g coconut flour
  • 4 eggs
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1/tsp salt
  • 1tsp vanilla extract

For the peanut butter frosting:

  • 225g unsalted butter, softnened
  • 300g smooth peanut butter
  • 500g icing sugar
  • 1 tsp vanilla extract
  • 5tbsp milk

For the chocolate ganache:

  • 100g good quality dark chocolate
  • 150m double cream

And here's how it's done:

  • Preheat oven to 175C 
  • Grease a round spring form with butter
  • In an electric mixer combine the bananas, peanut butter, vanilla and butter and whisk until smooth
  • Carry on mixing on a medium speed and add the eggs one by one until the mix is completely combined
  • Switch the mixer to a medium-low speed and add the coconut flour, bicarbonate of soda and baking powder. 
  • Mix until well combined
  • Pour the batter into your spring form, smooth the top and bake for 50 minutes
  • Once baked, leave to cool on a cooling rack
  • After the cake is completely cooled, cut horizontally into two halves
  • To make the frosting combine the butter and peanut butter in a mixer whisking on medium speed until combined
  • Add the vanilla extract 
  • Sieve the icing sugar and add bit by bit whilst continuously whisking
  • Add the milk spoon by spoon until you have a smooth cream
  • Now put half the frosting on the bottom half of the cake, put the second half on top and cover with the remaining frosting
  • Put the cake into the fridge for half an hour for the frosting to set
  • To make the ganache break the chocolate into small pieces and put into a heatproof bowl
  • Pour the cream into a saucepan and bring just about to a boil
  • Pour the hot cream onto the chocolate pieces and stir until the chocolate is completely melted, combined and smooth
  • Pour the ganache over the cake and smooth with a spatula
  • Leave to set (if you can hold off that long) before serving with coffee
