Apple, Chocolate & Oat Loaf...

Back home from our small break in North Yorkshire (I still need to edit photos which I'll share soon) and being back in London feels as - usual after a lovely break in the countryside - somewhat wrong. I knew I was back the moment somebody honked their horn at me for actually stopping at a red light. Yes, that's London. Where stopping at red lights is apparently not only optional but considered an annoyance. I spent yesterday working like mad on a project I need to have completed by Friday and which will still take up the next two days. This is something I wanted to do for a long time and which combines my passion for interiors, food and photography. More of that hopefully at some other time. 

In the meantime, I wanted to share this recipe. If you follow me on Instagram, you will already have spotted it. I baked it a couple of weeks ago on the day I found out my grandmother had died. It wasn't really that unexpected as she had turned 100 last July, but it still came as a bit of a sad shock. She was my last living grandparent and it feels like a whole part of family history has now gone. So, on the day I found out, I did what I tend to do when I don't know how to handle a situation: I cleaned and I baked. I won't show you the results of my cleaning, but here's the baking part. An apple and chocolate loaf baked with oatmeal instead of flour and agave syrup instead of sugar. It can nearly be classified as healthy I'd say, wouldn't you?

Apple, Chocolate & Oat Loaf

You will need the following ingredients:

  • 250g oats, "milled" in a food processor
  • 1 medium apple
  • 2 large eggs
  • 75g coconut oil
  • 75ml agave syrup
  • 50g dark chocolate, chopped into shavings
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • a little coconut oil to grease the baking form

And here's how it's done:

  • preheat your oven to 200C
  • grease the baking form
  • after processing the oats, mix them with the baking powder and bicarbonate of soda
  • peel the apple and chop into small pieces
  • mix the coconut oil with the eggs, add the agave syrup and mix until all combined
  • add the apple pieces and chocolate shavings and mix
  • now fold in the oatmeal mix
  • transfer to your greased baking form and bake for around 30-40 minutes
  • leave in the form to cool before serving
